put in custom PHP files; (case-sensitive). E.g if($_PAGE['page']=='contact') $_PAGE['description']='Contact us on 0800 888 777';
put in HTML templates as a Smart Tag e.g. {{ if {$_PAGE[category]=='Shoes'} ... }}
